Instructions

Step 1
Combine green onion, red pepper flakes, tomatoes, and feta. Spread across half the tortilla, leaving a 1/2-inch border around the edges. Top with shrimp and fold the tortilla over in half.
Step 2
Spray a skillet with cooking spray and heat over medium. Once hot, add the quesadilla and cook 2 minutes on each side, until cheese is melted and the tortilla is golden brown.
Step 3
Toss lettuce with olive oil.
Step 4
Serve quesadilla with lime and salad on the side.
