Instructions
Step 1
Place your couscous, two tablespoons of olive oil, and a pinch of salt in a small pot and mix with a fork to coat each grain nicely. Pour in hot broth or water, cover with a lid and let it swell.
Step 2
Meanwhile, prepare all the remaining ingredients in a salad bowl. Fluff the finished couscous with a fork and add to the bowl. Stir everything lightly and add the crumbled feta on top.
Step 3
Mix the dressing ingredients together and pour over the salad.
