If doing a big batch, bag up and freeze what you don't eat! Defrost and start heating to an edible temperature (mild simmer). If serving with tortillas... Hold a tortilla flat in your hand, put a bunch of lettuce in the upper middle area. Add a ladle full of chilli onto the lettuce, then wrap the tortilla "wings" around from both sides (into a sort of cone shape) and tuck the bottom up, to stop the mix falling out! Beware, wear a pinny/apron if you eat this way. It's easy to ruin a nice top with a squirt of chilli-tom mix. Eating when naked is even safer, but can cause problems in mixed company. Variation: You could sprinkle a little cheese on top the mix after dishing-up or just before wrapping, if tortilla's are your thing.

Instructions

Step 1
Heat the oil in a large saucepan, add the onion, garlic, celery and chillies and fry gently for 15 minutes until softened and lightly golden.
Step 2
Stir in the spices and oregano and continue to cook for 1-2 minutes.
Step 3
Add the beef and cook for 10-15 minutes, breaking t up by stirring until no longer showing as red/raw (kinda grey and a little brown).
Step 4
Add the cocoa, tomatoes, kidney beans, bay leaf and stock.
Step 5
Bring to the boil (medium, not vigorous boil).
Step 6
Season with salt and then reduce the heat and simmer for 1 hour to 1¼ hours (add extra water if the mix looks too stiff).
Step 7
Note: If you make a big batch, increase this simmer time to 2 hours.
