One-pan Greek chicken

Greek food is naturally low in carbs, as well as fresh and nutritious. I love the flavours - they marry so well.

Instructions

Step 1
Heat a large frying pan over high heat.
Step 2
Place the chicken pieces in a bowl and season with salt. Add the olive oil, lemon zest and lemon juice and mix through.
Step 3
Add the chicken to the pan and cook for 5 minutes on all sides.
Step 4
Add the onion, garlic and dried origanum to the chicken in the pan and cook for 2 minutes.
Step 5
Add the tomatoes and stir through. Season lightly with salt and simmer for 4 minutes.
Step 6
Sprinkle over the feta and olives and simmer for a further 2 minutes.
Step 7
Serve warm topped with fresh origanum and basil.
