Spice-Rubbed Tuna Steaks with Caramelized Fennel

Ingredients
4 servings
7 tablespoonsolive oil
divided
2fennel bulbs
large, cut into 8 wedges, fronds reserved
1 ½ teaspoonsblack pepper
divided
1 teaspoonkosher salt
divided
1 teaspoonground fennel seeds
1 teaspoonground coriander
½ teaspoonground cardamom
½ teaspoonpaprika
4 x 6 oztuna steaks
1orange
medium
1 teaspoonaleppo pepper
ground
Instructions
Step 1
1. Preheat oven to 425 degrees.
Step 2
2. Heat 2 tablespoons oil in an oven proof skillet over medium high. Add fennel wedges, cook until one side is caramelized, 4 to 5 minutes. Flip fennel and place pan and oven. Roast at 425 degrees, staring occasionally for 12 minutes
Step 3
3. Place fennel in a bowl and toss with 1/2 teaspoon black pepper and 1/4 teaspoon salt
Step 4
4. Combine fennel seeds, coriander, cardamom, paprika, remaining one teaspoon black pepper and remaining 3/4 teaspoon salt.

5. Coat tuna with one tablespoon oil then coat with spice mixture
Step 6
6. Heat 2 tablespoons oil in a skillet over high. Cooked tuna to desired degree of doneness, about 2 minutes per side for medium rare. Cut steaks in half diagonally
Step 7
7. Section orange over a bowl. Reserve juices
Step 8
8. Combine orange sections, one tablespoon fennel fronds and remaining 2 tablespoons oil
Step 9
9. Top orange mixture and fennel wedges with Aleppo pepper if desired and remaining fennel fronds. Served with tuna
