Golden Salmon Cakes with Tzatziki Sauce

Ingredients

Tzatziki Sauce

½ cupplain greek yogurt

1 teaspoondried dill

¼ cupcucumber
minced

sea salt
to taste

freshly ground black pepper
to taste
Salmon Cakes
Instructions
Step 1
Make the Tzatziki Sauce: Combine all ingredients in a bowl and mix well. Set aside. (Note: we added about 1/4 teaspoon of garlic powder.)
Step 2
Remove any skin from the salmon. Place into a medium bowl and flake with a fork. Set aside.
Step 3
Heat 1 tablespoon oil. Add the celery and leek and sauté for 5 minutes
Step 4
Meanwhile, add the dill, parsley, salt and pepper. Once celery and leek are soft, add to the bowl and mix well.
Step 5
Add the beaten egg and almond flour or bread crumbs and mix thoroughly.
Step 6
Wipe skillet clean and add remaining oil. Heat over medium-high heat.
Step 7
Form the salmon mixture into 4 patties. Cook 2 at a time, about 3 minutes per side until golden brown. Repeat until all patties are cooked. Top with tzatziki sauce and service with a nice salad.
