Instructions

Step 1
Add 1 1/2 teaspoons lemon juice or vinegar to 1/2 cup milk. Set aside for at least 5 minutes.
Step 2
Combine dry ingredients and scallion in a medium bowl. Make a well in the center of the mixture and set aside.
Step 3
Stir together egg, cheeses, and milk mixture in a small bowl. Add all at once to the flour mixture, then stir just until moistened.
Step 4
Turn the dough into a lightly floured board/surface. Knead dough 10-12 times, gently folding and pressing flour into the dough. Do not over handle the dough. It will toughen the scones.
Step 5
Form dough into a large flat circle and either cut into eight wedges or just separate the wedges and press into the scone pan
