Simple Bun Rieu Recipe

Here is the text from the image: Simple bun rieu (shrimp paste noodle soup) I cut roma tomatoes (5) to quarter. Sauté in a pot with a little oil. Add salt (little), chicken powder, and then 2 cartons of chicken broth. Add shrimp paste (mam tom) while the broth is still cold. Meanwhile, I crack 4 eggs into a bowl, beat them, then add 1 jar of shrimp paste (rieu tom). Mix them well together, then pour the mixture into the pot while it’s low boiling. Very important to turn down the heat while pouring in the mixture, otherwise, it breaks into small pieces of rieu. Cook the vermicelli noodle according to the package instructions. I put some shredded cabbage into the bowl, then add the noodle. Pour the hot broth into the bowl with each ladle. Add lime, chili as you like. If you need to adjust the flavor, you can add more shrimp paste (mam tom) to your bowl or fish sauce. Enjoy.

Instructions

Step 1
Lightly brown the onion, garlic, green onions in a pot with oil. When browned, add quarter tomatoes.
Step 2
Add 2 carton of chicken broth, 1 teaspoons of salt, 3 tablespoons of chicken powder into the same pot. 1 tablespoon shrimp paste with diluted water into pot for flavor bun rieu smell. You can also add 1-2 cups water here too
Step 3
Meanwhile… Option 1: Crack 3 large eggs into a bowl, beat it, then add 1 can of shrimp paste (rieu tom). Mix them well together. Add sautéed onions from earlier or fresh chopped onions, fresh green onions, some diluted shrimp paste if desired. . . Option 2: The same as above AND add 1/4 ground pork or ground chicken to the mix. When the broth is boiled, spoon the mix into the pot on medium low. . . Very important to lower down the heat, otherwise it will break into small pieces of rieu. They will float when done.
Step 4
Add 6 tablespoons of fish sauce, 1 teaspoon of salt. 3 teaspoons of chicken powder. Add more to taste
