King prawns on a bed of samphire

This dish is full of flavour, it’s spicy, salty and so fresh. The tender prawns compliment the succulent samphire beautifully.

Step 1
Start by melting your butter and add 1tbsp olive oil in a shallow pan
Step 2
Add your chilli powder, garlic, salt, sugar and parsley. Let that cook softly for a few minutes
Step 3
Add your prawns. As they are already cooked we need to make sure we heat them all the way through, so cook for about 7 minutes on each side. Squeeze some lemon juice over the prawns.
Step 4
Once they are cooked, remove the prawns with tongs and put them in a bowl to the side
Step 5
Add your samphire to the pan with the remaining sauce, add olive oil if it needs a bit more
Step 6
Cook the samphire for a few minutes in the pan, use a lid to cover the samphire so it steams slightly.
Step 7
Once the samphire is hot, use your tongs to transfer to a shallow bowl. Top the samphire with your prawns.
Step 8
Pour the rest of the sauce over the prawns, another squeeze of lemon, and season. Enjoy!
