Tuscan Salmon

One of my ALL TIME FAVORITES. This meal had me in shambles the first time we made it. The pairing of the crispy crust of the salmon with the creamy, tangy, cheesy sauce alone will have you feeling the same way. Originally found on eatwell101, just tweaked:)

Instructions

Step 1
Heat oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once salmon filets are cooked, remove from the pan and set aside.
Step 2
In the same pan, melt the butter in the remaining cooking juices leftover. Add in the garlic and cook until fragrant (about one minute). Add onion and cook until translucent. Add the sun-dried tomatoes and cook for 1-2 minutes.
Step 3
In a separate pot, cook pasta.
Step 4
Reduce heat in the skillet to low, add the heavy cream, and bring to a gentle simmer while stirring occasionally.
Step 5
Add in the spinach and allow to wilt in the sauce, then add in the parmesan cheese. Allow the cream sauce to simmer for a further minute until cheese melts through and begins to thicken.
Step 6
Add the now cooked pasta into the pan and mix in. Add the grilled salmon filets back into the pan; sprinkle with the parsley, and spoon the sauce over each filet. Enjoy🤍
