Spicy Chicken Tinga Tacos

Ingredients
6 servings

1 x 14.5 ozcan Diced fire roasted tomatoes

0.5white onion
small, finely chopped

4 clovesgarlic
large, finely chopped

1 teaspooncumin

1 teaspoonoregano

1 teaspoonchile powder

1 teaspoonsmoked paprika

1 x 7 ozcan chipotle peppers in adobo sauce

1.75 poundschicken breasts skinless and boneless

salt
to taste

ground black pepper
to taste

Mexican cheese mix
shredded

lettuce
shredded
Fresh mango salsa

flour tortillas

Avocado
optional, sliced
Instructions
Step 1
In a large pot, add canned tomatoes, onion, garlic, cumin, oregano, chile powder, paprika, and chipotle peppers. Stir together and simmer over medium-high heat. Add chicken, salt, and pepper to pot. Cover and simmer over medium-low heat for 40-50 minutes.
Step 2
Once chicken is tender, transfer to a plate and shred. Add shredded chicken back into pot, mix well, and cook on medium-high heat for 5-15 minutes (until sauce is thickened and chicken is fully cooked).
Step 3
Serve chicken mixture on a warmed flour tortilla with shredded cheese and lettuce. Top with fresh mango salsa (store bought or if you have a homemade recipe), fresh avacado slices, and hot sauce of your choice.
