Instructions

Step 1
Heat the oil in a medium saucepan over a medium heat. Add the onion and fry for 5-10minutes, stirring occasionally
Step 2
Add the tomatoes and cook for 3 minutes. Increase the heat and add stock, peppers and basil and bring to the boil. Reduce heat and simmer for 10minutes stirring occasionally
Step 3
Remove from the heat and blend until smooth. Season with salt and pepper
Step 4
Pour into a warm bowl and drizzle double cream over the top
Step 5
For the croutons, slice and toast the sourdough bread Fry off diced bacon until cooked and crispy Mixed the feta cheese, olive oil and bacon together. Sprinkle and serve on top on the toasted sourdough bread
