Step 1
Place pasta in salted water, bring to boil uncovered, turn off and cover pot. Pasta should be Al dente when sauce is done. In a skillet, heat olive oil, brown shallots, add mushrooms, seasoning and cook until mushrooms are softened. Add sausage and brown. Add tomato paste and finish cooking the sausage. Stir in pesto. Add tomatoes and heat until bubbling. Spoon in pasta. Loosen sauce with pasta water as needed. Parmesan cheese served on the side.
