Dodo (spinach stew)

This stew is traditionally made with amaranth, a green (or purple) leafy vegetable. This can be quite hard to find, so this recipe substitutes in spinach. Tested, tweaked and photographed by Frankie

Instructions

Step 1
Wash and chop the greens and place in a large pot of cold water. Let come to a boil, and then boil until the leaves are soft.
Step 2
Remove the greens, reserving the water.
Step 3
Place the greens, along with 5 cloves of fresh garlic, in a mortar or food processor (It's okay if you have to work in batches because you have a small mortar.)
Step 4
Pound the greens and garlic mixture until it's bruised, in pieces, and incorporated.
Step 5
Chop up the rest of the vegetables , then, in a medium pot, heat the vegetable oil and all the vegetables except the tomatoes. Let the vegetables sweat for 6 minutes, stirring occasionally.
Step 6
Add the tomatoes, and season the vegetable mixture with salt and pepper.
Step 7
Continue to cook for another 5 minutes until all the vegetables are completely soft.
Step 8
Add the greens and garlic mixture to the pot, and cover with 3 ladle-fulls of hot water (the water you previously boiled the greens in is perfect for this).
Step 9
Boil the mixture for 10 minutes.
Step 10
Add the finely chopped peanuts and stir to incorporate.
Step 11
Continue cooking, stirring occasionally, over medium heat, for 1 hour.
