Ingredients

2onion
diced
2red pepper
diced
2cans sweetcorn
4garlic cloves
minced
2 Tbsppickled jalapeños
minced
2 Tbspchilli seasoning
2 Tbspground cumin
2cans black beans
400gquinoa
2cans chopped tomatoes
1200mlchicken stock
200gcheese
vegan jalapeño
coriander
to garnish, ✅
salt
to taste
pepper
to taste
tacos
plenty, tortilla chips
salsa
Instructions
Step 1
1. Heat oil in big ole pan
Step 2
2. Add onion, red pepper and corn - cook/ mix for 1 min
Step 3
3. Add garlic, jalapeños, chilli powder, cumin and quinoa - mix well
Step 4
4. Add tomatoes, beans and chicken stock
Step 5
5. Bring to boil, reduce to simmer and cook 20 mins approx
Step 6
6. Remove from heat, sprinkle cheese on top and allow to melt with lid on for a few mins
Step 7
7. Serve with coriander tortilla chips/ tacos and salsa
