Sir Fried Chicken and Broccoli with Mango Chutney

Ingredients
4 servings
8 ozwhole wheat capellini
1 Tbspsesame oil
¼ cupslow sodium chicken broth
¼ cupsmango chutney
3 tablespoonsreduced sodium soy sauce
2 tspwhite vinegar
2garlic cloves
large, finally grated
2 teaspoonscornstarch
¼ teaspooncrushed red pepper
2 tablespoonsgrapeseed oil
divided
1 lbboneless skinless chicken breasts
trimmed and sliced
5 cupsbroccoli florets
1 Bunchscallions
sliced with greens and whites divided
Instructions
Step 1
Cook pasta until just tender, 2 to 3 minutes. Drain and toss with sesame oil
Step 2
Meanwhile, whisk broth, chutney, soy sauce, vinegar, garlic, cornstarch and crushed red pepper in a small bowl and set aside
Step 3
Heat one tablespoon grapeseed oil any 14 inch flat bottom wok over high heat until hot but not smoking
Step 4
Add chicken and cook, until just cooked through, 5 to 6 minutes. Transfer to a plate
Step 5
Reduce heat to a medium and add the remaining one tablespoon of oil, broccoli and scallion whites to the wok. Cook, stirring until just tender, 2 to 3 minutes
Step 6
Return the chicken to the wok. Make a well in the center of the ingredients and add the reserved sauce. Cook, stirring and combining it with the chicken and vegetables until the sauce is thickened, about 2 minutes
Step 7
Serve over pasta and garnish with scallion greens
