Korean Army Stew
Korean spiced broth with staple army ration as topping. This noodle soup is full of history and transports you to the post Korean era, with everyday pantry item and an easy version of a Korean ramen broth.

Ingredients
2 servings
Mushroom mix
shiitake, king oyster, enoki, cut into chunks
Tofu
cut into bite size pieces
Sausages
sliced or cut into chunks
Spam
cut into bite size pieces
canned baked beans
Kimchi
roughly chopped
6 cupsBroth
mix beef, chicken and/or pork
ramen noodles
2eggs
Cheddar
or Swiss cheese
spring onions
2 Tbspchili powder
or chili flakes
1 Tbspblack chinese vinegar
2 Tbspsugar
1 Tbspsoy sauce
2garlic cloves
2 tspgochujang
korean chili paste
Instructions
Step 1
Combines ingredients for the spicy seasoning and set aside
Step 2
In a large saucepan, sauté the mushroom over medium-high heat. Add tofu and sausages if you chose to include it ans grill them now.
Step 3
Add the broth and seasoning to taste, and stir in additional toppings (Kimchi, beans, spam) if you chose to include them.
Step 4
Add the ramen noodles and crack the eggs to poach. They should take about the same time to cook, but whatever you do don't overcook the noodles 🤣! If you're nervous, cook the noodles first and add them to a bowl before cooking the egg.
Step 5
Serve into bowls and top with cheese and spring onions
