Nando’s Fried Chicken Burgers with Sides

Instructions

The Chicken Wet Marinade

Step 1
Slice the chicken breast in half to make to fillets and lay in a bowl
Step 2
Mix the yogurt, Nando’s sauce, and vinegar and pour over the chicken
Step 3
Mix around to thoroughly coat the chicken
Step 4
Cover with cling film and set in the fridge for an hour

Peri Salt

Step 5
Add all the peri salt spices and herbs to a blender and blitz for 30 seconds to turn into a fine powder and remove large chunks of herb

Split into 2 - we want half in the flour mix and the other half for dusting the chips/burgers!

The Coleslaw

Step 7
Slice up the cabbage and onion into super thin strips and grate the carrot then place in a large mixing bowl
Step 8
Squeeze the lemon juice into the bowl and add all the other bits. The double cream makes it extra creamy

Adjust the flavour with salt, pepper and lemon juice to your liking😋

Garlic Ciabatta Buns

Step 10
Crush the garlic and mix with the butter and parsley

Cut the ciabatta rolls in half and spread a coating of the garlic butter on each

Bake for 8-10 minutes at 180C

The Chicken Burgers

Preheat the oil to 180C
Step 14
Mix the flour with 1/2 of the peri salt
Step 15
Dip the chicken fillets in and squeeze in the flour mix to ensure an even coating all over

Dip the chicken into the oil and fry for 5-6 minutes til deep golden brown

Remove and drain the excess oil on a wire rack

Nando’s Rice

Step 18
Fry the rice with oil and salt on medium heat for 3-4 minutes to toast the starch. This means you can avoid washing it.

Add the water and cover, and simmer for 10 minutes, adding in the peas for the last 3 minutes

Turn the heat off and let sit for another 10 minutes.

Roughly dice the onions and peppers

Fry in oil for 3-5 minutes til soft

Add the spices and salt and fry for 2 minutes before adding the rice and peas and stir fry to combine and serve up

Other Bits

Cook the oven chips as per packet instructions and top with peri salt while still warm

Fry the Halloumi for 2 minutes a side

Assembly

Get the garlic ciabatta bun, lay coleslaw, the chicken, Halloumi, spicy Mayo, peri salt and the top bun, and serve with all the sides!
