Instructions
Step 1
Finely chop shallots and garlic then fry off in a pan for 5 minutes
Step 2
Add in thyme and rosemary
Step 3
Once shallots are golden add the two tins of beans and the veg stock
Step 4
simmer for 10-15 minutes (until the stock has reduced to a nice consistency)
Step 5
stir in kale and spinach and allow it to wilt
Step 6
add coriander and mix well before serving
