Ingredients

1red onion
diced
400gchopped tomatoes
400gcannellini beans
rinsed
2 Tbsptomato purée
2 Tbspmaple syrup
1 Tbspapple cider vinegar
10gcoriander
1 tspndried oregano
1lime
juiced
1 Tbspjalapenos
minced
2sourdough bread slices
toasted
1 Tbspolive oil
2eggs
good quality and fresh
1 Tbspwhite wine vinegar
100mlwater
fajita seasoning
Instructions
Step 1
Heat up some oil in a pan and cook the diced red onion until soft before adding the Puréety Fajita seasoning, jalapenos and tomato purée - stir and cook for a couple of minutes
Step 2
Add the chopped tomatoes, water, cannellini beans, maple syrup, apple cider vinegar and dried oregano and simmer for 30 mins
Step 3
When the sauce is the consistency you like, start the poached eggs. Bring a saucepan of water to the boil with the white wine vinegar inside. One at a time drop the eggs into the simmering water and cook for 3-4 minutes or until the white is cooked. drain onto kitchen paper or cloth
Step 4
Add the coriander & lime juice to the beans and serve on the toasted sourdough then place the poached egg on the top of the beans and serve
