Blueberry Protein Pancakes

yummy! just blend all ingredients and plop on the griddle! These will be wetter than you expect; once the bubbles start forming wait a minute or two longer till those bubbles have gotten big all over the pancake

Instructions

Step 1
Heat griddle to medium heat (320 - 375 F)

Add the rolled oats, cottage cheese, blueberries, eggs and egg whites to a blender. Blend until smooth.

Step 3
Spray the griddle with cooking spray. Using a ¼ measuring cup, pour the batter onto the greased griddle. (~5" diameter) Once small bubbles begin to form on top, flip and cook on the other side until golden brown.
Step 4
Divide the pancakes into four equal servings. Top each serving with 2 Tbs. whipped cream and syrup. Enjoy!
