Instructions

Step 1
Finely dice onion and saute in pressure cooker for 3-4 minutes. Add diced garlic and saute for an additional 30 seconds. Turn off the saute function when you're done cause it gets hot!
Step 2
Add the 1 cup of rice in with garlic and onion in the pressure cooker. Add in 1 cup broth (reserve the half cup for later) , and around 1 tbsp of your spices. Google the right cooking time for the rice you're using - will probably be around 4-7 minutes on manual/high.
Step 3
When the rice is done, mix in the refried beans, drained black beans, the canned tomatoes if you're using, and the rest of your Mexican spice mix into the pressure cooker. Add the half cup of broth, and season with salt and pepper. Reheat mix using either the sauté function or the steam function. Alternatively, you can heat up the beans+tomatoes in a pan as your rice cooks, and combine them together in the instant pot.
Step 4
Chop up veggies - tomatoes, lettuce, and any other veggies you may want to include.
Step 5
Build burrito in wrap adding veggies, cheese and hot sauce to taste.
