Instructions

Step 1
Preheat the oven to 400°F.
Step 2
Halve the bell peppers lengthwise.
Step 3
Scoop the cores and seeds out of the middle and discard.
Step 4
Place the peppers in the baking dish with the cut sides facing up and bake until tender when pierced by a fork,
Step 5
Meanwhile, in a large sauté pan, heat the oil over medium heat.
Step 6
Add the onion and cook until soft but not browned, 3 to 4 minutes.
Step 7
Add the meat and cook until browned and cooked through, 5 to 6 minutes, breaking it up with a spatula.
Step 8
Drain off the fat, then season the meat with the chili powder, cumin, oregano, salt, and lime juice. Add black beans & rice.
Step 9
Pull the peppers out of the oven and turn on the broiler.
Step 10
If liquid has accumulated in the cooked peppers, use tongs to drain them into the sink.
Step 11
Divide the taco filling evenly among the pepper cavities.
Step 12
Sprinkle with the cheese and broil the stuffed peppers until the cheese on top turns golden brown, 3 to 5 minutes.
Step 13
Take care that it doesn't burn; the broiler works quickly! Serve warm topped with sour cream and cilantro, if desired.
