Step 1
1. In a casserole over medium-low heat, add your chopped onion, carrot and celery with some olive oil for a couple of minutes or until your veggies are nice and soft.

2. Add lentils, tomatoes, water and give a nice stir, then season with a pinch of salt, pepper and rosemary.
Step 3
3. Cover with a lid and cook for about 50 minutes or until your lentils are fully cooked and they have absorbed all the liquid. Stir occasionally.

4. Sprinkle a drop of olive oil at the very end to make your vegan Bolognese sauce nice and sexy!

5. Serve with some pasta or toasted bread!
