Instructions

Step 1
Heat a steel pan on medium-low add garlic with a pinch of salt and a touch of neutral oil to get things started
Step 2
While that's going, salt the shallots to draw out the oil for 20-40 minutes, depending on the color of the garlic
Step 3
Heat the oil in a pot to 200 F. Once the garlic is nice and scorched, add it to the oil

Wring out as much water as possible from the shallots, then add them to the oil as well
Step 5
As soon as the shallots are about to turn brown, crank the heat to 300 F
Step 6
As soon as the oil reaches 300 F, cut the heat off and add the peppercorns and chili flakes and let cool to room temp
Step 7
Let it sit overnight, then blitz
