Instructions

Step 1
Heat some oil in a large, deep pot over medium heat
Step 2
Fry onions and celery for 5 minutes
Step 3
Add fennel, garlic, zucchinis, and broccoli stalks. Saute gently for 10 minutes stirring occasionally
Step 4
Pour in hot stock and add chickpeas, bring to a boil and cook at a fast simmer for 5 minutes
Step 5
Add broccoli florets, parsley, and spinach. Pop lid on pot and allow to simmer for 7 to 8 minutes, until broccoli is tender
Step 6
Season with salt and pepper and add lemon juice
Step 7
Use an immersion blender to smooth out to your liking
