300gquorn mince

2 Tbspvegetable oil

diced, seeds removed

½ tspsmoked paprika

2 tspground cumin

3 tspground coriander

1 tspchilli puree

tin chopped tomatoes

500mltomato passata

1 Tbsptomato puree

1vegetable stock cube

Tin kidney beans

1 tspbrown sugar

Instructions
Step 1
1. Preheat the oil in a pan and cook the onion for 5-6 mins or until beginning to soften. Add the red pepper and continue to cook for a further 5 mins. Add the chillies, garlic, spices and cook for a further 2 mins stirring continuously.
Step 2
2. Stir in the chopped tomatoes, passata, tomato puree and crumble over the stock cube and bring to a gentle simmer for 8 mins stirring occasionally. Stir in the kidney beans and sugar.
Step 3
3. Stir in the chopped coriander and serve. You can add greens into the dish if wanted. Spinach for example.
