Instructions

Step 1
Bring a pot of well salted water to a boil and cook gnocchi for 6-8 minutes - until tender and floating to the surface
Step 2
While the gnocchi cooks, saute onions for 3-4 minutes in a large saute pan with a little bit of oil or butter for the pan.
Step 3
Add garlic, peas and diced pepper
Step 4
Add the cooked gnocchi and vegetable stock. Toss well to coat and cook until stock is reduced to a sauce coating the gnocchi
Step 5
At the very end add in the tomatoes and kale butter salt and parmesan cheese. Toss to combine and taste for seasoning. Adjust if needed
