Ingredients

500gpotatoes
1onion
medium, diced
2garlic cloves
minced
1 Tbspfresh ginger
minced
1 x 265gchickpeas
can
1 x 400gcrushed tomatoes
can
1 ELAgave syrup
200mlvegetable broth
For the spice mix
Instructions
Step 1
Add chopped onions, garlic and ginger into a large pan over medium high heat and sautee until onions are soft.
Step 2
Add all the spices and fry for another minute.
Step 3
Add the cubes potatoes and stir to coat them in the spices.
Step 4
If the potatoes and/or spices start sticking to the bottom, add some water a little bit at a time. Then add in the chickpeas, crushed tomatoes and vegetable broth.
Step 5
Once it starts to simmer, bring the heat down to a medium and allow it to simmer for 15 minutes, uncovered until the potatoes are cooked through and the sauce becomes thick.
