Instructions
Step 1
Heat the oil in a large saucepan on medium heat
Step 2
Add the onions and fry for 10-15 minutes until golden brown
Step 3
Add the garlic, spices and peppers and fry for a further 5 minutes before adding the potatoes and mixing well
Step 4
Cover with the two tins of tomatoes, plus one tin of water. Season well, cover with a lid and leave to simmer for 30-40 minutes, or until the potatoes are tender and soft
Step 5
Serve with rice topped with red onion
