Instructions
Step 1
Heat coconut oil in a large skillet over medium heat.
Step 2
Add in chives, garlic, ginger, and chopped pecans.
Step 3
Sauté for 2-3 minutes then add zucchini and cook for another 2-3 minutes.
Step 4
Stir in the curry powder, turmeric, soy sauce, boiling water, peas, and chickpes.
Step 5
Cook for 4-5 minutes
Step 6
Stir through the hemp seeds and cook for another 1-2 minutes, or until the water has been absorbed.
Step 7
Remove from the heat and season with Himalayan salt and black pepper.
Step 8
Place the lettuce leaves on a plate.
Step 9
Fill each with half of the mixture to serve for today's lunch.
Step 10
Refrigerate the remaining mixture and lettuce cups for tomorrow's leftovers.
