Instructions

1. Add oil in a medium to large pot 2. Add sliced onions and fry until translucent 3. Add tomato paste and fry until ready 4. Add bay leave
5. Add blended pepper mix (Tomatoes, red bell peppers, scotch bonnet, garlic, ginger), fry with tomato paste 6. Add broth of choice and stir together 7. Season with choice of seasoning (maggie, salt, garlic powder, onion powder, Cameroon pepper, paprika, thyme, curry powder, nutmeg, smokey liquid) Adjust seasoning to taste. 8. Stir and allow sauce to simmer for about 3 minutes 9. Wash your rice of choice, for this recipe parboiled rice is best. Add rice into the sauce and stir in, adjust seasoning at this time. 10. Cover pot with aluminum foil and cook rice on low heat for about 20 mins. 11. Open and stir rice together and turn off heat once ready.
12. Serve with your choice of protein or veggies. ENJOY! FYI: Measure rice and sauce ratio and add water to adjust.
