Instructions
Step 1
Rinse the quinoa with running water. Place it in a saucepan with a ½ tbsp olive oil and toast for 1 minute over medium high heat.
Step 2
Add the chicken stock and bring to a boil. Turn heat to medium low and simmer until cooked (12-15 minutes). Turn off the heat.
Step 3
Peel and grate the carrot. Finely chop the chives, cilantro and scallion greens.
Step 4
Whisk eggs and flour until smooth.
Step 5
Add the spices and herbs and mix well.
Step 6
Add the quinoa and season with salt & pepper.
Step 7
Heat oil in a frypan over medium heat. Scoop ¼ cup of batter per fritter into the pan. Fry for 3-4 minutes per side until golden brown.
Step 8
Serve with low FODMAP aioli.
