Ingredients
4 servings
2sweet potatoes
cubed
1 bunchcavelo nero
2celery sticks
finely chopped
1 Tbspcoconut oil
2cloves garlic
chopped
1red onion
large, chopped
1 tspturmeric
½ tspcayenne pepper
½ tsppaprica
½ tspcoriander
½ tspcumin
½ tspginger
½ tspgaram masala
1 cupred lentils
1can of coconut milk
500mlvegetable stock
salt
pepper
toasted flaked almonds
fresh coriander
1lime juiced
Instructions
Step 1
Softern the onions, garlic and celery in the coconut oil.
Add all the spices
Add the sweet potatoes, chickpeas, lentils.
Add the stock and coconut milk. Stir regularly and cook for 15 minutes
Toast the flaked almonds
Add the cavelo, cook for 5 minutes
Before serving, add the juice, almonds and coriander.
