Toasted Pesto-Chicken Sausage Sandwiches

Instructions

Step 1
Cut sausages almost in half crosswise, then in half lengthwise.
Step 2
In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat.
Step 3
Cook sausages in oil 5 to 7 minutes, turning occasionally, until golden brown.
Step 4
Remove from skillet; set aside.
Step 5
In small bowl, mix pesto and mayonnaise.
Step 6
Brush one side of bread slices with remaining 2 tablespoons oil.
Step 7
Spread pesto mayonnaise on plain side of 4 of the bread slices.
Step 8
On each slice spread with pesto mayonnaise, place 1 cheese slice, 2 tomato slices, 4 basil leaves and 1 cooked sausage.
Step 9
Top with remaining bread slices, oiled side up.
Step 10
Heat same skillet or a griddle over medium-high heat.
Step 11
Add sandwiches; cook 3 to 5 minutes, turning once, until golden brown and cheese is melted.
