Step 1
Add natural cottage cheese and milk to a pan. It’s important the Cheese is natural with no additives . Heat on medium heat and break it down until it starts to get soft . About 5 - 8 minutes
natural cottage cheese400 grams
whole milk400 grams
Step 2
Strain the cottage cheese through a sieve and let it rest 5 minutes . You can add the leftover milk to pancake batter or cake batter .
Step 3
Put the Cheese back in the pan with a pinch of salt and then baking soda . Now heat on low and use a spatula to flatten and spread the cheese . After 10 minutes you can see it is getting stretchy . Now add a tablespoon of butter take it off the heat and mash the butter in well. Butter a ramekin and add the cheese shaping it into a circle . There may be small lumps but don’t worry they should dissolve . Now cover in plastic wrap and weigh it down with a can of beans or jar of something heavy. After an Hour place in the fridge to chill.
