Mini-pizza with tofu and “cheese” sauce
I used the left-over sauce from the pasta dish I made in previous post (check recipe: Mango and cashew pasta sauce), and used it as a “cheese” sauce for these mini baguettes filled with tofu, aubergine and bell pepper, like a mini-pizza or whatever you want to call it 😅 They were so tasty and filling!! 💦

Ingredients
2 servings
Tofu filling
200gextra firm tofu
crumbled into small pieces
0.5red onion
chopped
0.5bell pepper
chopped
80gaubergine
chopped
3garlic cloves
2 Tbsptomato purée
2 Tbspsunflower oil
0.5dark soy sauce
1 tspsea salt
1 tsppaprika powder
1 tspdried oregano
½ tspginger powder
Pizza bread
“Cheese” sauce
1.2 dlmango and cashew sauce
Instructions
Step 1
In a large bowl, add all the tofu filling ingredients (except the cheese sauce) and stir everything together.
Step 2
In a heated pan, fry the tofu mixture on medium-to-high heat for about 6 minutes.
Step 3
Place the mini baguettes halves on a baking sheet and spread some of that “cheese” sauce on them. Add the tofu mixture to them (I pressed the mixture onto the bread to fill it up and make it stick to the bread). Finally top it off with some more of that “cheese” sauce.
Step 4
Bake in the oven at 200 C/395 F for 10 minutes, until crisp.
