Instructions

Step 1
1 Cook the brown rice according to the package instructions.
Step 2
2 Heat the olive oil in a large skillet over medium heat.
Step 3
3 Add the minced garlic and diced onion, and sauté for 2-3 minutes until the onion is translucent.
Step 4
4 Add the sliced carrots and red bell pepper to the skillet, and sauté for about 5 minutes until the vegetables start to soften.
Step 5
5 Add the sliced mushrooms, cubed tofu, and 1/4 cup of water to the skillet. Cover with a lid and let it steam for about 5 minutes.
Step 6
6 Add the diced apple, cashews or sunflower seeds, and raisins (if using) to the skillet. Stir to combine everything.
Step 7
7 Add the spinach or other dark leafy greens to the skillet, and stir until the greens are wilted.
Step 8
8 Pour the Soy Vey marinade over the stir fry, and stir to coat everything evenly.
Step 9
9 Cook for an additional 1-2 minutes until the sauce has thickened and everything is heated through.
Step 10
10 Serve the stir fry over the cooked brown rice, or mix the rice right in at the end.
