Instructions
Step 1
Add all of the ingredients to a large pot and bring to a boil. Lower the heat to a simmer and cook for 15 minutes, or until all vegetables are soft.
Step 2
Use a hand blender to puree until your desired consistency is reached. Season with salt and pepper to taste. Divide into bowls and enjoy!

Leftovers: Refrigerate in an airtight container for up to four days or freeze if longer.

Serving Size: One serving equals approximately two cups.
Step 5
More Flavour: Add ground cloves, honey, and fresh thyme. Saute the garlic and onions.
