Delicious and super easy tandoori Chicken with yellow rice and a cucumber yogurt sauce, my family’s favorite…..
—Tandoori Chicken—
:
-3 large chicken breasts (cut into 1 inch bite size pieces)
-1/4 cup of olive oil
-1 tablespoon ginger (fresh or paste)
-3 cloves of garlic or (1 Tbls garlic paste)
-1/2 cup of plain yogurt
-1 tablespoon of tandoori spice
-1 tablespoon garam masala
-1/2 tablespoon paprika
-1/2 teaspoon of Kashmiri chili
-1/2 teaspoon of salt
-1/2 teaspoon black pepper
-1 teaspoon of turmeric
-1 lime (the juice)
:
——Mix everything ⬆️ together marinate for 1 hour or overnight
——oven temperature 425° for 30 minutes then broil for 5 minutes.
:
—Rice—
:
-3 cups of basmati rice (washed and soaked for 20 minutes)
-3 tablespoons of olive oil
-1 tablespoon of chicken bouillon
-1/2 teaspoon of black pepper
-1/2 teaspoon of turmeric
-1 teaspoon of cumin
-1/2 teaspoon of salt
-3 cups of hot water

—cucumber yogurt sauce—
:
-2 Persian cucumbers
-1 clove of garlic
-1/2 cup of plain yogurt
-1/4 cup of sour cream
-the juice of half a lemon
-1 teaspoon of dried mint or fresh
-1/8 teaspoon of salt or to taste
