Ingredients
6 servings

1onion
medium, finely chopped

4garlic cloves
finely chopped

1stalk celery
chopped

1carrot
large, chopped

1potato
cut into small cubes

1 tspdried oregano

1 tspdried thyme

1bay leaf

5 cupsvegetable broth

1 ½ cupstomatoes
crushed

½ cuppasta

1can cannellini beans

1 cupkale
shredded

pepper
to taste

fresh parsley
to garnish

1can of kidney beans
Instructions
Step 1
Water fry the onion, salt, garlic, celery and carrots until tender.
Step 2
Add the potato and herbs, the mix. Add the broth and tomatoes.
Step 3
Bring the soup to the boil then simmer until the potatoes are tender.
Step 4
Add the pasta, beans and kale. Continue simmering until the pasta is cooked.
Step 5
Serve with fresh parsley.
