Step 1
Prepare the red onion by roughly dicing
Step 2
Heat a large pot with oil, crushed garlic cloves and red onion until softened
Step 3
Add the paprika, cayenne pepper, ground coriander, chilli flakes and mix
Step 4
Now add the coconut milk, peanut butter, tomato puree, drained chickpeas, veg stock powder and lime juice and stir
Step 5
Cook on a high heat for 5-6 minutes until it starts to thicken
Step 6
Take off the heat and add in the spinach to wilt (if using)
