Healthy Granola with Healing ingredients

The ingredients are Gluten-free and refined sugar-free.
Cook’s Notes:
* I've used maple syrup as it's my favourite sweetener to use in heated recipes. I avoid heating honey. You can also use Xylitol, Stevia or coconut sugar as an alternative 'healthy' sugar
* Add the raw coconut flakes, chia seeds, ground flaxseeds last as these burn quickly
* ‘Odourless’ coconut oil is processed. Choose the organic kind instead as it's natural.
* ‘Silpat’ mats are silicon baking mats that are reusable and used in place of parchment paper
* Store in a glass container, preferably one with the silicon ring inside the lid for airtight sealing. Your granola should last for 1 week - a month, unless consumed sooner.
* Use glass instead of plastic to prevent bacterial growth or contamination

Instructions
Step 1
Pre-heat the oven to 180˚C.

Step 2
Measure out all ingredients and set aside ready for combining.
Step 3
Line a sheet pan with parchment paper or a silpat* mat.
Step 4
In a large mixing bowl combine the rolled oats, pumpkin seeds, sunflower seeds, raw almonds and cashews, maple syrup and vanilla extract. Toss and mix until all ingredients are combined evenly.
Step 5
Melt the coconut oil until it is liquid. Pour into the dry mixture and coat well.
Step 6
Pour this mixture into the lined sheet pan. Spread and pat down evenly with a spatula.
Step 7
Bake for 10 minutes. Remove from oven.
Step 8
Pour over the chia seeds, flaxseed and coconut flakes, and stir through gently while flipping over the granola to toast on the other side.
Step 9
Bake for another 5 minutes or until the coconut flakes are golden brown or have golden brown edges.
Step 10
Remove from the oven and let it cool in the pan completely before transferring to a glass (see Cook's notes) airtight container.
Step 11
Add the goji berries after baking and stir through
