Ingredients
8 servings

2 cupsspaghetti sauce
3 cups for a stronger tomato flavor

1 x 32 ozChicken Broth

1 x 32 ozBeef Broth
Start off with half and add more if needed

1 x 14.5 ozcan Italian Style Diced Tomatoes

1 lbGround Italian Sausage
feel free to use beef/turkey/no meat/etc

1 cupHeavy Whipping Cream

1 x 12 ozLasagna Noodles

1 x 15 ozRicotta Cheese
tub

⅓ cupshredded Mozzarella

⅓ cupItalian Cheese
shredded Style

Seasonings
I Used:

1 tspgarlic pepper

1 tspCaldo de Tomate
Tomato Bouillon

½ tspseasoned salt

½ tspBasil Leaves

Garlic Powder
OPTIONAL

Onion Powder

Oregano

Italian Seasoning
Instructions
Step 1
* Brown your sausage(or meat of choice) and drain any excess grease/fat
Step 2
* In a large pan over medium/high heat, mix together the cooked sausage and 2-3 cups of spaghetti sauce
Step 3
* Pour in the entire carton of chicken broth and ½ of the carton of beef broth and stir (set aside the other half for later, if needed)
Step 4
* Pour in the can of diced tomatoes
Step 5
* Break up lasagna noodles and add into the pot with the rest of the ingredients, stir well, and make sure all the noodles are covered with broth
Step 6
* Add desired seasonings (taste mixture and adjust as needed)
Step 7
* Stir well and make sure all noodles are covered. Bring to a boil and cover. Lower heat to low/medium. Let soup simmer for 8 minutes.
Step 8
* While soup is simmering, mix together ricotta, ⅓ cup of shredded mozzarella, ⅓ cup of shredded italian style blend cheese, and seasonings of your choice (I used about ½ tsp of seasoned salt and ½ tsp of garlic pepper)
Step 9
* Once the 8 minutes is up, remove the lid from the soup and stir in 1 cup of heavy whipping cream and 2 heaping tablespoons of the ricotta mixture
Step 10
* Mix well and cover soup with lid, raise stove to medium/high heat
Step 11
* Let soup simmer for about 2 more minutes (or until pasta is cooked through)
Step 12
* If your soup came out too thick, add more broth or water.
Step 13
* Serve with a scoop of ricotta mixture on top and enjoy!
