Instructions
Step 1
In a medium bowl mix eggs, coconut milk, coconut oil, maple syrup and vanilla with an electric mixer.
Step 2
In a small bowl, stir together the coconut flour, baking soda, and salt. Add to wet ingredients and beat well til smooth and lump free.
Step 3
If batter is to thick add additional liquid.
Step 4
Lightly grease a large skillet with coconut oil. Place over medium heat.
Step 5
Add the batter in 1/2 cup scoops and cook for about 3 min or until golden brown on the bottom. Flip and cook 2 more minutes.
Step 6
Stack pancakes on plate and continue to cook remainder of the batter. Makes about 8 pancakes.
