Instructions

Prepare the dressing

Step 1
Blend garlic, dijon, juice of 1 lemon, and 1/3 cup olive oil in blender until combined. Season with salt.

Make the Couscous

Step 2
Prepare 1 cup couscous according to package instructions
Step 3
Dice all vegetables into bit sized pieces, coat with olive oil/salt, and broil on high util browned and tender.
Step 4
Combine couscous and veggies in a bowl with dressing. Finely chop fresh herbs and add to your liking. Adjust seasoning as needed.
