Instructions
Step 1
Heat the oil in a large pan over a high heat.
Step 2
Add the rainbow chard to the pan and sauté for 2 minutes.
Step 3
Add the chilli flakes, cumin, and ginger and cook for a further minute.
Step 4
Tip in the tomatoes and spoon in the peanut butter.
Step 5
Reduce the heat to medium.
Step 6
Add the red kidney beans and soy sauce to the pan.
Step 7
Stir regularly to prevent burning and cook for 8 minutes.
Step 8
Spoon into bowls and scatter with the coriander.
