Instructions

Step 1
Cook rice according to packet instructions.
Step 2
Heat oil in a large pan and add the onion, capsicum, bok choy, beans and garlic and cook for 6-7 minutes.
Step 3
Add chicken and sprinkle curry powder on top. Cook for 5-7 minutes or until chicken is cooked through.
Step 4
Add the coconut milk and lime juice and simmer for an additional 5 minutes. Season with salt and pepper.
Step 5
Serve with rice and divide into two portions.
