Instructions

Chicken

Step 1
Whisk yogurt, curry paste, oil, salt, and pepper together in medium bowl. Add chicken and toss to combine. Refrigerate for at least 30 minutes or up to 1 hour. Thread chicken onto four 12-inch metal skewers; set aside.

Whisk all ingredients together in bowl.

Step 3
Adjust oven rack to middle position and heat oven to 475 degrees. Line rimmed baking sheet with aluminum foil. Toss potatoes, 2 tablespoons oil, ½ teaspoon salt, and ¼ teaspoon pepper together on prepared sheet. Arrange potatoes cut side down around outside of sheet. Roast until bottoms begin to brown, about 15 minutes.

Step 4
Remove sheet from oven and heat broiler. Toss green beans with remaining 2 tablespoons oil, remaining ¼ teaspoon salt, and remaining ¼ teaspoon pepper. Place green beans in center of sheet. Place kebabs around perimeter of sheet on top of potatoes. Return sheet to oven and broil until chicken is lightly charred on top, about 8 minutes. Flip kebabs and continue to broil until lightly charred on second side and chicken registers 160 degrees, 6 to 8 minutes. Serve kebabs with vegetables and sauce.
