Instructions
Step 1
In med. bowl, combine mild caribbean Jerk Seasoning, salt & a drizzle of olive oil. Add chicken; toss to coat. Set aside.
Step 2
In lg. fry pan, heat drizzle of olive oil over med.-high. Cook sweetcorn (4-5 min.), tossing occasionally, until golden & lightly charred. Transfer to another med. bowl. Add carrot, onion, & coriander to charred corn with a drizzle of olive oil & the white wine vinegar. Season with salt/pepper. Mix well; set aside.
Step 3
Return frying pan to med.-high; drizzle with olive oil. Cook chicken (5-6 min.), tossing until browned & cooked through.
Step 4
While chicken cooks, heat mini flour tortillas in a sandwich press or on a plate in micro. (10 sec. bursts), until warmed through.
Step 5
Bring everything to table to serve. Fill tortillas with some shredded Lettuce & jerk chicken. Top with charred corn salsa & coconut sweet chilli mayonnaise.
